A Sweet Passport Stop from Paris to New Orleans
Not every Passport to Paris journey needs a fork and knife.
Sometimes all you need is a buttery cookie, a scoop of ice cream, and permission to have a little fun.
For National Ice Cream Sandwich Day, I turned to the classic French sablé cookie as the foundation for a Paris–New Orleans dessert.
What Is a Sablé?
Sablés are traditional French butter cookies known for their tender, crumbly texture.
They are simple cookies, but as with so many French recipes, the magic comes from good butter and proper technique.
For an ice cream sandwich, I bake mine just until lightly golden.
That keeps them sturdy enough to hold the ice cream but tender enough to bite once frozen.
A New Orleans Ice Cream Story
The Louisiana connection came through our local ice cream flavors.
We featured ice cream from The Creole Creamery, including their Café au Lait flavor made with coffee and chicory and their Black and Gold flavor featuring double vanilla and chicory root with crushed Oreos and semi-sweet chocolate flakes.
Those flavors brought this French cookie right back home to New Orleans.
For an additional Louisiana touch, the edges can be rolled in crushed pecan praline.
Why This Recipe Is So Much Fun
Passport to Paris isn't only about reproducing dishes exactly as they have always been made.
It's about understanding the traditions and then finding thoughtful ways to connect them to our own.
A French butter cookie.
New Orleans ice cream.
Louisiana praline.
Three ideas from different places coming together in one very happy dessert.
Bring the Journey Home
Bake a batch of sablés and create your own ice cream sandwich bar.
Put out several ice cream flavors, crushed pralines, chocolate, nuts, and other toppings and let everyone build their own.
Because sometimes cultural exchange can be serious.
And sometimes it can be deliciously messy.
Passport to Paris should always leave room for dessert.
